#Take a whole chicken (with/without skin). For marination I have used – 1 tsp garlic and ginger paste, salt, 1 tbsp yogurt, 1 tsp chilli powder. The chicken was marinated overnight.
#Take a bowl. Add 1 cup fried onions( beresta) , 1 tbsp almond paste , 1 tsp garam masala , 1 tbsp tomato sauce , 1 tsp white pepper , 1 tsp nutmeg ,mace and cumin altogether. Mix them in a blender until you get a smooth paste. Add water if needed. Make sure about the thick consistency.
#Take a pan. 1/2 cup Ghee/ Butter.
Now fry the whole marinated chicken until you get the light brown color. Made sure to fry in medium flame so that the chicken gets cooked perfectly. After frying the chicken , take it out separately.
#On the same pan , add 1/2 cup onion paste , dry spices ( cinnamon and cardamom) , salt and the thick paste we made after blending. Cook the gravy for 10/15 minutes until the layer of oil comes out of the paste. Then add the whole chicken we fried into the gravy and 1 cup of water so that it gets properly cooked. Cook it for 10 minutes more until you see the the gravy getting thick.
#Add 1/2 cup raw milk , 1 tsp sugar and 1/2 cup Powdered milk / Mawa. Mix them well. And our chicken is ready.
Serve it in a plate and garnish with some fried onions and Mawa. Don’t forget to attach some Naan / Porota / Naan with it.
